What are the ingredients for cookie butter?
The main ingredient for all cookie butter spreads is butter cookies that are made with brown sugar and spices. You can find them in most European countries, and they are typically served around the Christmas holiday season. The first time I was introduced to a cookie butter spread was while shopping in December in Germany. One of the booths at a Christmas market was allowing samples of Lotus cookie butter. It was divine!
Cookie butter can be either creamy of crunchy. The basic ingredients for cookie butter spread are crushed up speculoos cookies, butter, sugar, oils and a bit more cinnamon and nutmeg. Trader Joe markets it as "a deliciously unusual spread reminiscent of gingerbread and made with crushed biscuits". I agree that the butter cookies have a distinct taste, but I wouldn't have associated it with gingerbread. What about you? I mean to me gingerbread has a strong ginger flavor and some spice to it, like my gingerbread reindeer cookies have.
Growing up, my dad used to have my mom put the windmill speculoos cookies in his lunch box. I had forgotten about them until I had a Biscoff cookie served to me on an international flight. It seems like these speculoos cookies are a favorite snack on flights. I've even started to get Biscoff cookies instead of pretzels on domestic US flights. There are lots of types of cookie butter cookies, once you know the basic brown sugar cinnamon flavor, you'll spot them all over the place!
How can I use cookie butter in baking?
Cookie butter is simple to use in your baking recipes. You can simply substitute in any recipe that calls for peanut butter. It's really that easy. If it's a bit too thick, and your struggling, you can microwave it just the slightest amount to make it softer. The brown sugar, cinnamon and nutmeg add a nice flavor, but it doesn't have to be used individually. It is complimented well with both dark chocolate and white chocolate.
Is Cookie Butter Gluten Free?
Sadly it is not. I know, it's torture my friends. I know I mentioned trying it on international flights and during Christmas markets in Germany, but that was before I was diagnosed with Celiac. So I still remember the incredible taste. I have yet to find a speculoos cookie that is gluten free either. So until Trader Joe's decides to start selling them, we are stuck making our own. I would suggest using a 1-1 gluten free flour mix with a recipe for speculoos cookies. Let me know if you find a brown sugar cinnamon butter cookie recipe you love!
Also, those windmill cookies can sometimes contain nuts. So if you have a nut allergy, you want to make sure you always double check packages.
Can I make my own cookie butter?
Absolutely! If you have cookie butter cookies, it would be fun to make your own, since you could control the ingredients. Simply adjust to find the portion of ingredients that you prefer. This would be ideal if you had a recipe for gluten free cookie butter cookies, since I have been unable to find a gluten free cookie butter spread! If you don't have specific needs though, it's just as easy to buy store bought cookie butter.
Creamy Cookie Butter VS Crunchy Cookie Butter?
The choice is up to you! Just like peanut butter, they can each offer a different take to a recipe. They even sell a cocoa swirl!
If you do prefer crunchy cookie butter and are cookie with it, remember you can always add in some crushed cookies to add to the texture even more.

It's getting much easier to buy speculoos cookie spread, mainly because of the many brands like Trader Joe's, Biscoff, Lotus, and even store brands like HEB. HEB is a Texas grocery chain that sells their own mixture! If you don't live by a Trader Joe's or a Cost Plus World Market that carries it, you can always order off of Amazon!
