  • Saute onion in reserved bacon grease for 3 to 5 minutes.

  • Stir in flour and cook for 1 minute.

  • Stir in vinegar, water, ground mustard, sugar, and salt and pepper.

  • Reduce heat and simmer for about 2 minutes.

  • In a large bowl, add potatoes, celery, and dressing.

  • Gently toss and top with crumbled bacon and parsley.
