As you get older, you don’t need the pile of presents you needed as a kid to feel the magic of Christmas. Presents are still fun, but you start to realize other traditions hold even more of the charm of the season. One of my favorite holiday traditions these days is Christmas breakfast. My mom makes a big pan of amazing cinnamon rolls and another big pan of Egg & Grits casserole. My mother-in-law makes this incredible Breakfast Pie with eggs and hot sausage. The day wouldn’t feel complete without that indulgent first meal.

    Julie, I’m glad I checked back in time for this because you should know that I’ve tried a few recipes from your site over the past two years and I have never, ever had anything turn out less than superb.     Here it is!
    Christmas Grits and Sausage Casserole

    Ingredients

    1 cup grits, uncooked
    1 lb. sausage, cooked
    8 eggs, beaten
    1 ½ cups whole milk
    ¼ teaspoon garlic salt, (or fresh)
    ¼ teaspoon white pepper
    3 tablespoons butter, or margarine
    2 cups sharp cheddar cheese, shredded
    few dashes hot sauce, optional
    Method

    Cook grits as directed. Mix ingredients together and place into lightly greased 3 qt. casserole. Bake uncovered for 1 hour, or until set. Can add dash of hot sauce.
