Many moons ago, when I was in respiratory therapy school, one of the hospitals I did my clinicals at had an amazing breakfast spread in their cafeteria. There was a waffle bar, pancake bar, omelet bar, yogurt bar, oatmeal bar, they pretty much had a “bar” for everything! It was fantastic and I think I tried everything at leas once. However my go-to, absolute favorite thing to get was their Breakfast Quesadillas!
You went up to the counter, picked your egg style (scrambled!), meat (bacon!), cheese (american!), and your veggies (bell peppers, onions, and mushrooms!), and the chef would whip it up into an amazing Breakfast Quesadilla for you. It combined both my love of salsa for breakfast and savory foods. I’m not a huge fan of sweet things for breakfast, or really breakfast foods in general. I’m weird, I know.
So you better bet that after I graduated, moved to a new city, started my first job post-college, and found out that no one around here knows how to make a decent Breakfast Quesadilla I made my own!!
They really aren’t hard to make and as I mentioned yesterday I usually have a big pile of sautéed veggies in my fridge waiting to be used anyway so why not? I am on a “watching my carbs” kick so I used the Carb Balance tortillas to make this one with and it still turned out great!
Sometimes I put bacon or sausage in it for a little more protein but I didn’t have any on hand yesterday so I didn’t add any meat. That’s the beauty of the recipe, you can make it anyway you like! Want to fry your eggs? Do it!! Don’t want any veggies? Don’t use any! Want Pepper Jack cheese instead of American? Do it!
I also love mine with a side of salsa to dip it in and I always have a batch of my 5 Minute Salsa in my fridge ready to go so that’s what I paired this one with. YUMMY!!

Ingredients
- 1 tortilla
- 2 eggs scrambled
- 1/2 cup sautéed veggies
- 1/4 cup shredded cheese

Instructions
Scramble your eggs, or prepare them any way you like, in this recipe anything goes!!
Set eggs aside and in the same pan lay your tortilla down and sprinkle with shredded cheese. I spray a little olive oil in my pan before so the tortilla won't stick!
When cheese is melted add your eggs and veggies on one side and then flip it closed.
Cook for a minute or two and then remove the whole thing from the pan and cut into strips.
Enjoy!

Hi Ricci,
I can’t believe you don’t like sweet things for breakfast. I love it, like adding bananas or chocolate ships to pancakes or waffles. Yum! But I kind of understand, it’s not a must for me.
I love quesadillas in general but never really thought about them for breakfast. This sounds really good, and healthy with the veggies. Best part is you can take it on the go if you’ve got to run.
